As promised, here are the RECIPES!
Lemon Vinaigrette
1 lemon zested, 1/4 cup lemon juice,  1/2 cup Olive oil, 1 tsp kosher salt, pinch of sugar, 1/2 tsp black pepper
Add the zest, oil, salt, pepper, and sugar  in a bowl and whisk in the oil slowly to emulsify. Chill to let marinate fior 30 minutes. 

Spicy Tuna Salad
1 jar of Italian tuna in olive oil
1/4 celery
2 Tbl chopped shallots
2 Tbl cornichons
2 Tbl lemon Juice
1 Tbl mayo
2-4 Tbl tuna oil
1 Tbl Dijon mustard
2 Tbl peperoncini
1/2 tsp salt
1/4 blk pepper

Combine all the ingredients into a bowl until tuna is well coated. Adjust for taste. Refrigerate to let marinate for 30 or overnight.
